Energy balls are the perfect snack to fuel your day, especially if you’re on the go or need a pre-workout boost. These homemade energy bites are made with Jammunuts Almonds and Jammunuts Cashews, and they’re full of protein, fiber, and healthy fats. They’re also super easy to make, and can be stored in the fridge for a quick grab-and-go snack.
Ingredients:
- 1 cup Jammunuts Almonds, coarsely chopped
- 1/2 cup Jammunuts Cashews, coarsely chopped
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1/4 teaspoon vanilla extract
- A pinch of salt
- 1 tablespoon chia seeds (optional)
Instructions:
- Prepare the Nuts: Begin by coarsely chopping the Jammunuts Almonds and Jammunuts Cashews. This will give the energy balls texture, allowing the nuts to add a pleasant crunch to the final product.
- Process the Mixture: Place the chopped almonds and cashews into a food processor along with the rolled oats. Pulse a few times to combine. You want some bits of nuts remaining for that satisfying crunch!
- Add the Binding Ingredients: Next, add the honey, peanut butter (or almond butter), vanilla extract, and a pinch of salt. Pulse the mixture again until everything is well combined. If you’re adding chia seeds for an extra boost of fiber and omega-3s, now is the time to add them.
- Shape the Energy Balls: Scoop out the mixture and roll it into small balls (about 1 inch in diameter). This should yield about 12-15 energy balls, depending on the size.
- Chill and Enjoy: Place the energy balls on a plate or tray lined with parchment paper and refrigerate them for at least 30 minutes to firm up. Once they’re set, enjoy them as a healthy snack throughout the day!
